steam sterilizers (autoclaves) reach temperatures of 121 degrees C w/ boiling water. Explain how?

At hight perssures the water boiling point increases and they can be heated to a higher temperature before boiling

IN autoclaves water is heated to 121 degrees C at high pressures.

at low pressure e.g on a mountain the atomospheric pressure is low so water can boil below 100 degrees C

Additional info : When water turns to steam it can still be heated just because it has turned to steam it doesnt mean it can no longer can be heated.
Heating gases can go on, it is possible to heat gases untill the electrons ripe of the atom creating fourth state of mater plasma.
before water becomes plasma it breaks down to hydrogen and oxygen.
